-o ssh_command=/usr/bin/ssh.exe when launching SSHFS. This should fix issues where the wrong SSH is being launched (e.g. from the OpenSSH that ships with Windows which unfortunately is not compatible with Cygwin). Thanks to user @bersbersbers for the suggestion.
