Symphony 3.0 — Pre-release

A major cleanup and restructuring of the entire setup.

What's new:

• Replaced stow with a cp-based deploy system — existing configs backed up automatically before anything gets overwritten
• Everything renamed from dotfiles → symphony (dirs, variables, paths across 40+ files)
• Flattened structure: `.config/` → `config/`, `scripts/` → `bin/`, themes flattened
• All scripts consolidated into a single `bin/` directory
• Single `tmux.conf` — replaced the old multi-file setup
• New CLI commands: `symphony update`, `symphony restore`, `symphony fresh-setup`
• Staged first-run: theme installer on login 1, welcome notifications on login 2
• Neovim config replaced with current workspace version
• README rewritten in a more human tone
